Description
The Candied Loaf is a cake made with a sheet of brioche bread topped with a thin layer of apricot jam and candied cherries; it is all rolled up and garnished with almond paste and dusted with icing sugar just before cooking.
In fact, the sugar cooks and caramelises, forming a crunchy crust which together with the chopped almonds gives a consistency which contrasts pleasantly with the soft dough and cherries.
Recommended pairings:
- Spumante, coffee or smooth grappas
Once opened, store in a cool and dry place in the same tightly closed package.

History
The recipe for this "rich" dessert was created by Ernesto Pandolfini around the 1930s; the candied cherries assorted inside the dough were green, white and red, in honor of the Italian flag.

Ingredients
Brioche dough: WHEAT flour, EGGS, BUTTER (MILK), sugar, brewer's yeast, salt.
Filling: candied cherries (cherries, glucose syrup, fructose, citric acid E330, fruit and vegetable concentrate, caramel E150a, SULPHUR DIOXIDE (E220), brilliant blue E133), apricot jam (apricots, cane sugar, gelling agent: apple and lemon pectin, acidifier: citric acid).
Topping: ALMONDS, sugar, EGG whites, WHEAT flour.
May contain SOY, PISTACHIOS, HAZELNUTS, PEANUTS, MUSTARD AND OTHER TREE NUTS -
