Agrimontana extra jams have a high fruit content: they contain from 70 to 95 grams per 100 grams of product (well beyond the minimum of 45 grams required by law for the denomination "Extra Jam") and are without added pectin.
The preparation phases include cooking the fruit, adding cane sugar and vacuum-packed concentration at low temperature. Finally, the hot filling of the container followed by a rapid cooling.
The extra jams are naturally gluten-free.
For all these reasons, the Antonio Mattei biscuit factory has already been using this jam for the preparation of Candied Cherry Loaf since the early 2000s; the Pan Brioche sheet is rolled out and covered with a thin layer of this delicious jam, before being filled with coloured and candied cherries and finally rolled up to form the loaf, lastly covered with chopped almonds and icing sugar, before entering in the oven.
Since 2023, following the historic relationship of collaboration and friendship between the two companies, Antonio Mattei's extra apricot jam was created, now on sale in the historic shop in Prato and at the Museo Bottega in Florence, as well as in the online shop.
