Description
Prato Biscuits – commonly known as cantucci or almond cantuccini – are part of the Tuscan confectionery tradition and have long been enjoyed as the perfect accompaniment to a glass of Vin Santo at the end of a meal.
Made with flour, sugar, free-range eggs, almonds and pine nuts, they contain no preservatives, animal fats or vegetable fats.
Since 1858, our Prato Biscuits have been baked fresh every day and carefully packed by hand, one by one, in the iconic Mattei Blue Bag.
In 2019 was introduced the individually wrapped Prato Biscuit, presented in an entirely new – and unmistakably blue – single-serving package.
Ideal for trade fairs, professional offices, showrooms and retail stores, these individually wrapped biscuits can be elegantly displayed in our signature hatbox or enjoyed as a wholesome snack to take with you throughout the day.
Once opened, store in a cool and dry place in the same tightly closed package.
Our biscuits are packed in an aluminum film, specially designed to ensure the best possible preservation of their freshness and quality. They have a shelf life of 12 months from the date of production. The best before date and batch number are printed on the bottom of the bag. We always ship our biscuits as freshly baked as possible. -
History
Before 1858
The origins of Biscotti di Prato most likely lie in the tradition of almond biscuits that were widespread between Liguria and Tuscany. Originally prepared at home, they were simple, nourishing biscuits with a long shelf life.
1858 – Antonio Mattei codifies the recipe
In his bakery in Prato, where he produced bread, pasta and pastries, Antonio Mattei perfected the recipe for Biscotti di Prato and began selling them in the now-iconic blue paper bag, destined to become a symbol of Italian craftsmanship.
1861–1900 – International recognition
Biscotti di Prato received prestigious awards at major National and International Exhibitions throughout the nineteenth century, including the Special Medal at the Paris Universal Exposition in 1867, helping to establish Prato's reputation around the world.
1904 – Preserving the tradition
Around ten years after Antonio Mattei's death, the bakery was acquired by the Pandolfini and Piccioli families, who chose to preserve the original recipe and continue production in the spirit of continuity.
From the 1950s – Worldwide success
The strong international outlook of Prato's textile industry helped spread Biscotti di Prato far beyond Italy's borders, establishing them as one of Tuscany's most iconic traditional specialties.
2019 – The Mattei Blue
The European Union officially recognised the distinctive Mattei Blue as a European Union Colour Mark, protecting one of the Biscottificio Antonio Mattei's most iconic and recognisable features.
Today
For more than 165 years, Biscotti di Prato Antonio Mattei have been baked every day in the historic workshop on Via Ricasoli. Faithful to the original 1858 recipe, they remain an outstanding example of Italian artisanal baking, enjoyed around the world and featured in collaborations with prestigious international brands such as Gucci. -
